I think I am over thinking this.

The people getting away from the dining room table, are running away from being embarrassed.  Nothing more.  

Once they have finished they will have to rejoin society.  God forbid.  So they run.

Once they reach the main corridor, they appear to relax.  While they are just starting to eat, it is not a problem. But when they can feel they are finishing, my god, I might have to socialize.

So If you could lay out their next food just before they scarper, and they are allowed to start it without having to wait, they may stay the course, until the final course, which could be something long like a large mug of coffee.

In practice, people tend to be allowed to finish one course before going onto the next one.  This is the worst scenario, for a runner.  Taking away something they don't think finished is also traumatic.

Much better to put out the next course well before they need it.

Anyway I think I have made the point.  Make sure they are concentrated on a supply that is not going to run out.  Try to have three at a table.  Don't give them an uncertain sequence of dishes.  Always let them decide when a course is finished.
